Have you ever given small amounts of smoked malt a shot in your Scottish ales? It’s supposed to lend a peatiness that is style appropriate if used judiciously but awful if overdone.
I have not. I find a quarter pound of roasted barley can actually lend a very subtle smokiness.
I like your approach, smoke malt should go in whiskey not Scottish ales! 😉
My favorite way to enjoy my 80/- is chasing a nice single malt. Pairs amazingly well, the contrast heightens the sweetness of the beer’s malt. Also seems to make the mouth feel richer.
