Please tell me it’s not the barley wine
That is still in the fermenter. It was the dubbel, which we’ll also try tomorrow.

Oh there are months to go yet before bottling the barley wine. And oak spirals. And dry hops.
What are we doing next month? The heffy?
No, hefe will be June-ish. I think maybe IPA for end of April.
So I had a thought. Persimmon 90 min IPA.
You know, I don’t think I’ve ever had a persimmon. I was thinking a very British IPA. Lots of biscuit malt, Goldings hops.
They are bitter but oddly sweet too. Though it’s pretty damn ambitions I’ll give you that.
