All done. It is a bit of work, start to finish–clean the draft line, clean then sanitize and purge the keg, and afterward cleaning the fermenter and all the fittings. Worth it, every single time.

Finally back, An Untold Story, my IPA inspired by a jammie dodger. Heavily hopped with Belma from @hopsdirect. Lovely notes of strawberry, guava, and pineapple. Going to make another batch, soon, with Cashmere from the same farm.
Boil
Finally reached boiling. Getting a solid, roiling action, key to effective protein coagulation which leads to a clearer, more stable beer.
First
First runnings came in a little lower than I’d like but the volume was greater than expected. We’ll see where the whole volume comes out.
Vorlauf
Vorlauf looking great. Good color, very clear and running easily.
Star
The star of this recipe, Belma from the awesome family at @hopsdirect. It imparts a wonderful strawberry flavor, perfect for the jammie part of this beer’s inspiration.
Adjust
The mini mash lets me predict the pH of the main mash and adjust before starting so pH is ideal for starch degradation.
Mini
I combine a quart of brewing liquor with all the salts added with a proportion of grain that matches the ratio of the full batch, stir, cover and let stand for ten minutes.

Meanwhile I prepare a mini-mash.
